My squash, pumpkins, watermelon, and gourds. They grow so fast, I think its only been a week.
Re-starting nasturtium and marigolds. Luckily they grow fast too. ;-) These will be for companion planting. I always have my "The Gardener's A-Z Guide to Growing Organic Food" close by. I love and highly recommend this book for growing organically. Herbs and flowers are wonderful to have in your yard to keep away pests and bring in more pollinators.
