Putting by Zucchini

Look at all that zucchini. Making some bread today. Yum!

Ready for the freezer. This is one of the best ways to put zucchini in the freezer so it doesn't become mushy and yucky. You can add this to any recipe that calls for shredded zuke. I have it measured out in 2 cups for bread, but you can use it for pancakes and whatever else.

Oh! Details please! Did you just shred in food processor? Do you drain in a colander? Any additives or just straight to the jar?

I just used a cheese grater, but you could also use a food processor. Put down paper towels or a kitchen towel and let it drain the fluid and then put in the freezer. Super easy.
